Description

Did you know that Freekeh was a traditional Palestinian grain before rice was introduced during the Ottoman era? This makes it a special food whether you enjoy it in soup, salad, or cooked like rice. Like olive oil, Freekeh is highly seasonal and available for purchase only once a year for two weeks in spring. Freekeh is young green wheat. The wheat is harvested and left to dry for one day in the field, then gathered into piles. These piles are set on fire while farmers turn them using pitchforks, creating a unique smoky flavor. Afterward, it is hulled and left to dry for two weeks before being packed and sent to our customers.
